The week has been stressful and emotional. I was tired, I was lonely, I wasn’t happy with the things I did and couldn’t motivate myself to do anything at all. On Friday it got a little better. Brunch plans were made and stories were shared. And Saturday, all was good. Literally sunshine and roses. Okay, not roses, but daisies. And birds chirping. Risen early, I started ticking things off the to-do list. From weekly grocery shopping at the farmers’ market and the organic supermarket I came home with lots and lots of spring vegetables, almost too overwhelmed to know what to cook with them. And then came the sudden inspiration I had been waiting for so long: the blog name. I have already changed it recently, but it didn’t feel right to me. So new name. One that will stick. local & away I chose because it seemed to nicely describe the intention of my blog. Recognising the good in the local, be it food, city, family, friends. And allowing to dream away. Travel away. Letting the away inspire you in many ways.
Appreciating the here and now, the wonderfully sunny and warm day, the lack of obligations, having the flat all to myself, I decided to treat myself with a frozen yoghurt. Because what could be more delicious on a summery day that frozen yoghurt.
With only 2 ingredients I can hardly call this a recipe. I still want to share it’s so quick and easy that everyone should about it. I don’t have an ice cream maker so you don’t need one either. Start it while preparing lunch and you’ll have a fantastic afternoon treat.
You’ll need (for 1-2 portions):
1 cup yoghurt
1/3 cup sugar
pinch of salt
Thouroughly mix the yoghurt, sugar and salt in a little bowl, cover it and place in the freezer. Mix again after 30 min, 1 hour, 1:30, and after about 2 hours it should be ready.
Top it with whatever you like, chocolate chips, fruit, though I wouldn’t use anything warm/hot because it will melt it very quickly. I really enjoyed it plain as well. It’s all the sugar that makes it so good 😉
